Description

A delicious combination of garlic chili oil chicken bites served with a creamy Cajun Alfredo sauce and charred zucchini twists.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tablespoons garlic chili oil
  • 1 cup heavy cream
  • 1 cup Cajun seasoning
  • 8 oz fettuccine pasta
  • 2 medium zucchinis, spiralized
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the chicken pieces with garlic chili oil, salt, and pepper.
  3. Spread the chicken on a baking sheet and bake for 20 minutes or until cooked through.
  4. Meanwhile, cook the fettuccine pasta according to package instructions.
  5. In a saucepan, combine heavy cream and Cajun seasoning over medium heat, stirring until well mixed.
  6. Add the cooked pasta to the sauce and toss to coat.
  7. In a skillet, heat olive oil and char the spiralized zucchini for 3-4 minutes.
  8. Serve the chicken bites over the Cajun Alfredo pasta, topped with charred zucchini and Parmesan cheese.

Notes

  • Adjust the level of Cajun seasoning to taste.
  • For a spicier dish, add more garlic chili oil.
  • Can substitute chicken with shrimp or tofu for a different protein option.
