A delicious combination of garlic chili oil chicken bites served with a creamy Cajun Alfredo sauce and charred zucchini twists.
Ingredients

- 1 lb chicken breast, cut into bite-sized pieces
- 2 tablespoons garlic chili oil
- 1 cup heavy cream
- 1 cup Cajun seasoning
- 8 oz fettuccine pasta
- 2 medium zucchinis, spiralized
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the chicken pieces with garlic chili oil, salt, and pepper.
- Spread the chicken on a baking sheet and bake for 20 minutes or until cooked through.
- Meanwhile, cook the fettuccine pasta according to package instructions.
- In a saucepan, combine heavy cream and Cajun seasoning over medium heat, stirring until well mixed.
- Add the cooked pasta to the sauce and toss to coat.
- In a skillet, heat olive oil and char the spiralized zucchini for 3-4 minutes.
- Serve the chicken bites over the Cajun Alfredo pasta, topped with charred zucchini and Parmesan cheese.
Notes
- Adjust the level of Cajun seasoning to taste.
- For a spicier dish, add more garlic chili oil.
- Can substitute chicken with shrimp or tofu for a different protein option.
