A tender and juicy dish with a delightful glaze made from garlic, rosemary, and soy sauce, perfect for any gathering.

Ingredients

Scale
  • 2 lbs beef/pork tenderloin (cut into thick, 1.5-inch medallion steaks)
  • 1/4 cup packed brown sugar
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp balsamic vinegar
  • 68 whole garlic cloves, peeled
  • 2 fresh rosemary sprigs
  • 1 tbsp olive oil (for searing)
  • Salt and cracked black pepper, to taste

Instructions

  1. Prepare the Medallions: Pat the tenderloin medallions dry and season with salt and pepper.
  2. Sear the Medallions: Heat olive oil in a skillet and sear medallions for 1-2 minutes on each side.
  3. Arrange in the Slow Cooker: Transfer the seared medallions to the slow cooker with garlic and rosemary.
  4. Create the Glaze: Whisk together brown sugar, soy sauce, and balsamic vinegar; drizzle over the medallions.
  5. Slow Cook to Perfection: Cook on LOW for 3 to 4 hours.
  6. Serve and Enjoy: Plate medallions and spoon the garlic-infused reduction over them.

Notes

For a quicker cooking option, consider using an air fryer after searing the medallions.
