Description

A delicious and colorful medley of roasted vegetables seasoned with garlic and herbs, perfect as a side dish or a main course.


Ingredients

  • 2 cups of broccoli florets
  • 2 cups of cauliflower florets
  • 1 cup of bell peppers, chopped
  • 1 cup of carrots, sliced
  • 4 cloves of garlic, minced
  • 3 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the broccoli, cauliflower, bell peppers, and carrots.
  3. Add the minced garlic, olive oil, thyme, rosemary, salt, and pepper to the vegetables and toss until well coated.
  4. Spread the vegetable mixture evenly on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
  6. Remove from the oven and serve warm.
