- 1 cup buttermilk

Instructions
- In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, ginger, cinnamon, nutmeg, and salt.
- In another bowl, mix the buttermilk, egg, molasses, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour 1/4 cup of batter onto the skillet for each pancake and cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancakes and cook for another 2-3 minutes until golden brown.
- Serve warm with maple glaze drizzled on top.
Notes
- For a dairy-free version, substitute buttermilk with almond milk and add a tablespoon of vinegar.
- These pancakes can be made ahead and reheated in the toaster.
