Description

A gourmet ciabatta sandwich filled with grilled chicken or turkey, fresh mozzarella, roasted red bell peppers, and peppery arugula, drizzled with balsamic glaze and garlic aioli.

Ingredients

Scale
  • 1 loaf Ciabatta Bread
  • 1 cup Grilled Chicken or Turkey
  • 4 ounces Fresh Mozzarella or Brie Cheese
  • 1 cup Roasted Red Bell Peppers
  • 1 cup Arugula or Baby Spinach
  • 1/4 cup Caramelized Onions (optional)
  • 2 tablespoons Balsamic Glaze or Pesto Spread
  • 2 tablespoons Garlic Aioli or Mayonnaise
  • 2 tablespoons Olive Oil

Instructions

  1. Start with the Meat: Season the chicken or turkey with your choice of herbs and spices. Grill or pan-sear until golden and fully cooked, about 6-7 minutes per side, depending on thickness. Once done, let it rest before slicing.
  2. Prepare the Vegetables: If using, slowly caramelize onions in a skillet over low heat, stirring often until they’re golden and sweet. Roast bell peppers until slightly charred if not using jarred ones.
  3. Toast the Ciabatta: Slice your ciabatta loaf in half lengthwise. Brush the cut surfaces with olive oil and toast them in a preheated skillet or under a broiler until golden brown and crispy, about 2-3 minutes.
  4. Spread the Goodness: Generously slather both sides of the toasted ciabatta with garlic aioli or mayonnaise, followed by a drizzle of balsamic glaze or pesto.
  5. Layer the Ingredients: Start layering with a handful of arugula or spinach, followed by grilled chicken or turkey, roasted bell peppers, and the choice of cheese. Add caramelized onions if you wish.
  6. Close and Serve: Top with the other half of the ciabatta, press down gently, and slice into manageable portions. Serve immediately to enjoy while the ingredients are at their freshest.

Notes

For customization, try different cheeses or add sliced pickles for tang. Make-ahead grilled meat can be stored in the fridge to speed up assembly.
