- 2 Tomatoes, diced
- 1 Red Onion, diced
- 1 cup Rice or Quinoa
- 1 cup Greek Yogurt
- 1 tablespoon Dill, chopped
Instructions
- Marinate the chicken: In a mixing bowl, combine olive oil, lemon juice, minced garlic, salt, pepper, and Greek seasoning. Add the chicken breasts, ensuring they’re well-coated. Allow to marinate for at least 30 minutes; if time allows, pop them in the fridge for a few hours for ultimate flavor enhancement.
