- 1 lb chicken breast, diced
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 cups cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 cup tzatziki sauce
- Pita bread, for serving
Instructions
- In a bowl, combine olive oil, oregano, garlic powder, onion powder, salt, and pepper. Add the diced chicken and marinate for at least 30 minutes.
- Heat a skillet over medium heat and cook the marinated chicken until fully cooked, about 7-10 minutes.
- In serving bowls, layer the cooked rice or quinoa as the base.
- Add the cooked chicken on top of the rice or quinoa.
- Top with cherry tomatoes, cucumber, and red onion.
- Drizzle with tzatziki sauce and serve with warm pita bread.
Notes
- For extra flavor, let the chicken marinate overnight.
- Feel free to add other toppings like feta cheese or olives.
