A delicious and healthy dish featuring Greek chicken meatballs served with lemon-flavored orzo.
Ingredients

- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 clove garlic, minced
- 1 egg
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 lemon, zested and juiced
- 2 tbsp olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic, egg, oregano, salt, and pepper. Mix well.
- Form the mixture into meatballs and place them on a baking sheet.
- Bake the meatballs for 20-25 minutes or until cooked through.
- In a saucepan, bring chicken broth to a boil and add orzo. Cook according to package instructions.
- Once the orzo is cooked, drain and return to the saucepan. Stir in lemon zest, lemon juice, and olive oil.
- Serve the meatballs over the lemon orzo and garnish with additional parsley if desired.
Notes
- For a gluten-free option, use gluten-free breadcrumbs.
- Feel free to add more herbs to the meatball mixture for extra flavor.
- Leftovers can be stored in the refrigerator for up to 3 days.
