Description

A delicious and healthy dish featuring Greek chicken meatballs served with lemon-flavored orzo.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 egg
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon, zested and juiced
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic, egg, oregano, salt, and pepper. Mix well.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake the meatballs for 20-25 minutes or until cooked through.
  5. In a saucepan, bring chicken broth to a boil and add orzo. Cook according to package instructions.
  6. Once the orzo is cooked, drain and return to the saucepan. Stir in lemon zest, lemon juice, and olive oil.
  7. Serve the meatballs over the lemon orzo and garnish with additional parsley if desired.

Notes

  • For a gluten-free option, use gluten-free breadcrumbs.
  • Feel free to add more herbs to the meatball mixture for extra flavor.
  • Leftovers can be stored in the refrigerator for up to 3 days.
