Description
A hearty and nutritious Greek lentil soup, known as Fakes, enriched with fresh herbs and a splash of lemon for a refreshing taste.
Ingredients

- 1 cup green or brown lentils
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon cumin
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh parsley, chopped for garnish
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, sauté the onion, carrots, and celery until softened.
- Add the garlic and cook for another minute.
- Stir in the lentils, vegetable broth, diced tomatoes, oregano, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 30-40 minutes, or until lentils are tender.
- Stir in the lemon juice and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
Notes
- For a creamier texture, blend a portion of the soup and mix it back in.
- This soup can be stored in the refrigerator for up to 5 days.
- It can also be frozen for up to 3 months.
