Description

A delicious and tropical grilled chicken recipe featuring marinated chicken breasts and fresh pineapple, perfect for summer barbecues.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 tablespoon olive oil
  • 1 fresh pineapple, sliced
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix pineapple juice, soy sauce, brown sugar, garlic, ginger, and olive oil to create the marinade.
  2. Add chicken breasts to the marinade and let them soak for at least 1 hour, preferably overnight.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from the marinade and season with salt and pepper.
  5. Grill chicken for 6-7 minutes on each side or until fully cooked.
  6. During the last few minutes of grilling, add pineapple slices to the grill and cook until caramelized.
  7. Serve grilled chicken topped with grilled pineapple slices.

Notes

  • For extra flavor, marinate the chicken overnight.
  • Serve with rice or a fresh salad for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
