A delicious and tropical grilled chicken recipe featuring marinated chicken breasts and fresh pineapple, perfect for summer barbecues.
Ingredients

- 4 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 tablespoon olive oil
- 1 fresh pineapple, sliced
- Salt and pepper to taste
Instructions
- In a bowl, mix pineapple juice, soy sauce, brown sugar, garlic, ginger, and olive oil to create the marinade.
- Add chicken breasts to the marinade and let them soak for at least 1 hour, preferably overnight.
- Preheat the grill to medium-high heat.
- Remove chicken from the marinade and season with salt and pepper.
- Grill chicken for 6-7 minutes on each side or until fully cooked.
- During the last few minutes of grilling, add pineapple slices to the grill and cook until caramelized.
- Serve grilled chicken topped with grilled pineapple slices.
Notes
- For extra flavor, marinate the chicken overnight.
- Serve with rice or a fresh salad for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
