A delightful Grilled Chicken Caesar Salad with marinated chicken, fresh romaine, creamy dressing, and crunchy homemade croutons.

- 4 boneless, skinless chicken breasts (about 680g)
- 6 cups fresh romaine lettuce, chopped
- 1 cup freshly grated Parmesan cheese (about 100g)
- ½ cup homemade Caesar dressing
- 2 cups day-old baguette or Italian bread, cubed
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Marinate the chicken: Combine olive oil, garlic powder, salt, and pepper in a bowl. Add the chicken breasts, ensuring they’re well coated. Let them marinate for at least 30 minutes.
- Grill the chicken: Preheat your grill to medium-high heat. Grill the marinated chicken for 6-7 minutes per side, checking for an internal temperature of 165°F (75°C). Remove from the grill and allow it to cool slightly before slicing.
- Make the croutons: Preheat your oven to 400°F (200°C). Toss the bread cubes in a bowl with olive oil, garlic powder, salt, and pepper. Spread them evenly on a baking sheet. Bake for 10-12 minutes, or until golden brown and crunchy.
- Assemble the salad: In a large bowl, mix the chopped romaine, sliced grilled chicken, freshly grated Parmesan, and Caesar dressing. Toss gently to coat everything evenly.
- Finish with croutons: Just before serving, sprinkle the golden croutons on top.
Notes
Prep chicken and croutons in advance; store separately in the refrigerator. Assemble salad just before serving.
