  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 whole wheat pitas
  • 1 cup diced cucumbers
  • 1 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup fresh parsley, chopped
  • 1 cup hummus

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
  3. Coat the chicken breasts with the marinade and let them sit for 15 minutes.
  4. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  5. While the chicken is grilling, prepare the cucumber-tomato salsa by combining cucumbers, tomatoes, red onion, and parsley in a bowl.
  6. Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.
  7. Warm the pitas on the grill for about 1 minute on each side.
  8. Spread hummus inside each pita, add grilled chicken strips, and top with cucumber-tomato salsa.
  9. Serve immediately and enjoy!
