Ingredients

  • 4 ears of corn, husked
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Grill the corn for about 10-15 minutes, turning occasionally, until charred.
  3. Remove the corn from the grill and let it cool slightly.
  4. Once cool, cut the kernels off the cob and place them in a large bowl.
  5. Add the diced red bell pepper, cucumber, red onion, and cilantro to the bowl.
  6. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve immediately or refrigerate for 30 minutes to let the flavors meld.
