- 2 medium eggplants, sliced
- 200g halloumi cheese, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup Greek yogurt
- 1/4 cup fresh mint leaves, chopped
- 1 tablespoon lemon juice
- 1 clove garlic, minced
Instructions
- Preheat the grill to medium-high heat.
- Brush the eggplant slices with olive oil and season with salt and pepper.
- Grill the eggplant for about 4-5 minutes on each side until tender and charred.
- Grill the halloumi slices for 2-3 minutes on each side until golden brown.
- In a bowl, mix the Greek yogurt, chopped mint, lemon juice, and minced garlic to make the mint yogurt sauce.
- Arrange the grilled eggplant and halloumi on a serving platter.
- Drizzle the mint yogurt sauce over the salad and serve warm.
Notes
- For a smoky flavor, you can add smoked paprika to the eggplant before grilling.
- Feel free to add other vegetables like bell peppers or zucchini to the salad.
