Description

Grilled Mexican Street Corn, also known as Elote, is a delicious and flavorful dish that combines grilled corn on the cob with a creamy, spicy sauce and toppings.


Ingredients

  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup crumbled cotija cheese
  • 1 teaspoon chili powder
  • 1 lime, juiced
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Grill the corn for about 10-15 minutes, turning occasionally, until charred and cooked through.
  3. In a bowl, mix together mayonnaise, sour cream, lime juice, chili powder, and salt.
  4. Once the corn is grilled, remove it from the grill and brush the creamy mixture all over the corn.
  5. Sprinkle crumbled cotija cheese over the corn.
  6. Garnish with fresh cilantro and additional chili powder if desired.
  7. Serve immediately and enjoy!

Notes

  • For a spicier version, add more chili powder or hot sauce to the creamy mixture.
  • Elote can also be served off the cob by cutting the kernels off and mixing with the sauce.
  • Make sure to soak the corn in water for 30 minutes before grilling for extra moisture.
