Description
Grilled Mexican Street Corn, also known as Elote, is a delicious and flavorful dish that combines grilled corn on the cob with a creamy, spicy sauce and toppings.

- 4 ears of corn, husked
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup crumbled cotija cheese
- 1 teaspoon chili powder
- 1 lime, juiced
- Salt to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat the grill to medium-high heat.
- Grill the corn for about 10-15 minutes, turning occasionally, until charred and cooked through.
- In a bowl, mix together mayonnaise, sour cream, lime juice, chili powder, and salt.
- Once the corn is grilled, remove it from the grill and brush the creamy mixture all over the corn.
- Sprinkle crumbled cotija cheese over the corn.
- Garnish with fresh cilantro and additional chili powder if desired.
- Serve immediately and enjoy!
Notes
- For a spicier version, add more chili powder or hot sauce to the creamy mixture.
- Elote can also be served off the cob by cutting the kernels off and mixing with the sauce.
- Make sure to soak the corn in water for 30 minutes before grilling for extra moisture.
