Description
A delicious appetizer featuring grilled mini sweet peppers stuffed with creamy goat cheese and topped with fresh pesto.

- 12 mini sweet peppers
- 8 oz goat cheese
- 1/2 cup pesto
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill to medium heat.
- Cut the mini sweet peppers in half and remove the seeds.
- In a bowl, mix the goat cheese with salt and pepper.
- Stuff each pepper half with the goat cheese mixture.
- Brush the stuffed peppers with olive oil.
- Place the peppers on the grill and cook for about 5-7 minutes, until they are tender and slightly charred.
- Remove from the grill and drizzle with pesto before serving.
Notes
- For a spicier kick, add some crushed red pepper flakes to the goat cheese mixture.
- These can be made ahead of time and grilled just before serving.
- Feel free to use homemade pesto for a fresher taste.
