Description

A delicious appetizer featuring grilled mini sweet peppers stuffed with creamy goat cheese and topped with fresh pesto.


Ingredients

Scale
  • 12 mini sweet peppers
  • 8 oz goat cheese
  • 1/2 cup pesto
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium heat.
  2. Cut the mini sweet peppers in half and remove the seeds.
  3. In a bowl, mix the goat cheese with salt and pepper.
  4. Stuff each pepper half with the goat cheese mixture.
  5. Brush the stuffed peppers with olive oil.
  6. Place the peppers on the grill and cook for about 5-7 minutes, until they are tender and slightly charred.
  7. Remove from the grill and drizzle with pesto before serving.

Notes

  • For a spicier kick, add some crushed red pepper flakes to the goat cheese mixture.
  • These can be made ahead of time and grilled just before serving.
  • Feel free to use homemade pesto for a fresher taste.
