- 2 ripe peaches, halved and pitted
- 2 boneless, skinless chicken breasts
- 4 cups mixed greens (arugula, spinach, romaine, etc.)
- 1/2 cup nuts (pecans or almonds), chopped
- 1/4 cup feta cheese, crumbled (optional)
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat. Brush both sides of the chicken breasts with olive oil and season with salt and pepper.
- Place the chicken on the grill. Cook for 6-7 minutes per side until the internal temperature reaches 165°F. Remove and let it rest.
- Grill the peach halves cut side down for about 2-3 minutes until charred.
- Combine the mixed greens, sliced grilled peaches, chopped nuts, and feta cheese in a large salad bowl. Toss gently.
- Slice the grilled chicken and arrange it atop the salad.
- Whisk together the olive oil and balsamic vinegar, then drizzle over the salad before serving.
