- 2 ripe peaches, halved and pitted
- 8 oz fresh mozzarella, sliced
- 1 cup fresh basil leaves
- 2 tbsp olive oil
- Salt and pepper to taste
- Balsamic glaze for drizzling
Instructions
- Preheat the grill to medium heat.
- Brush the peach halves with olive oil and season with salt and pepper.
- Place the peaches cut-side down on the grill and cook for about 4-5 minutes until grill marks appear.
- Remove the peaches from the grill and let them cool slightly.
- On a serving platter, layer the grilled peaches, fresh mozzarella slices, and basil leaves.
- Drizzle with balsamic glaze before serving.
Notes
- For added flavor, marinate the peaches in a little honey before grilling.
- This salad can be served as an appetizer or a light main dish.
