Ingredients
Scale
- 1 pound large shrimp, peeled and deveined
- 1 avocado, diced
- 1 cup corn kernels (fresh or frozen)
- 1 small red onion, finely chopped
- ½ cup cherry tomatoes, halved
- ½ cup Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Juice of 1 lime
- Salt and pepper, to taste
- Fresh cilantro, for garnish (optional)
Instructions
- Marinate the shrimp: In a bowl, combine the shrimp, olive oil, lime juice, salt, and pepper. Allow it to marinate for about 10 minutes.
- Prepare the corn salsa: In a second bowl, mix the corn, red onion, cherry tomatoes, avocado, and cilantro. Squeeze lime juice over the top and season with salt and pepper.
- Make the creamy garlic sauce: In a small bowl, mix the Greek yogurt, minced garlic, and a pinch of salt. Adjust consistency with water if necessary.
- Grill the shrimp: Preheat your grill or grill pan on medium-high heat. Add the marinated shrimp and grill for 2-3 minutes on each side until they turn pink and opaque.
- Assemble the bowl: In your serving dish, start with grilled shrimp, top with corn salsa, drizzle creamy garlic sauce, and garnish with cilantro if desired.
Notes
Feel free to customize your salsa with diced bell pepper or jalapeño for an extra kick. Make-ahead tips: Prepare the salsa and sauce in advance for deeper flavors.
