Ingredients

  • 1 cup quinoa
  • 2 cups water

  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a pot, combine quinoa and water, bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
  4. Stir in chopped cilantro, lime juice, and olive oil into the quinoa.
  5. Season swordfish steaks with salt and pepper.
  6. Grill the swordfish for about 4-5 minutes on each side until cooked through.
  7. Assemble the bowls by placing quinoa at the bottom, topped with grilled swordfish, avocado slices, and cherry tomatoes.
