- 1 cup couscous
- 2 cups water
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 red onion, sliced
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 lemon, juiced
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- Fresh parsley for garnish
Instructions
- Preheat the grill to medium-high heat.
- In a saucepan, bring water to a boil and add couscous. Remove from heat, cover, and let it sit for 5 minutes.
- Toss the sliced zucchini, bell pepper, red onion, and cherry tomatoes with olive oil, salt, and pepper.
- Grill the vegetables for about 5-7 minutes, turning occasionally until tender and slightly charred.
- In a small bowl, whisk together lemon juice, Dijon mustard, honey, salt, and pepper to make the vinaigrette.
- Fluff the couscous with a fork and mix in the grilled vegetables.
- Drizzle the lemon vinaigrette over the couscous and vegetables, and toss to combine.
- Garnish with fresh parsley before serving.

- Feel free to use any seasonal vegetables you have on hand.

- For a vegan option, omit the honey or substitute with agave syrup.
