Description

A refreshing and healthy dish featuring grilled vegetables and couscous, topped with a zesty lemon vinaigrette.


Ingredients

  • 1 cup couscous
  • 2 cups water
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 lemon, juiced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Fresh parsley for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a saucepan, bring water to a boil and add couscous. Remove from heat, cover, and let it sit for 5 minutes.
  3. Toss the sliced zucchini, bell pepper, red onion, and cherry tomatoes with olive oil, salt, and pepper.
  4. Grill the vegetables for about 5-7 minutes, turning occasionally until tender and slightly charred.
  5. In a small bowl, whisk together lemon juice, Dijon mustard, honey, salt, and pepper to make the vinaigrette.
  6. Fluff the couscous with a fork and mix in the grilled vegetables.
  7. Drizzle the lemon vinaigrette over the couscous and vegetables, and toss to combine.
  8. Garnish with fresh parsley before serving.

Notes

  • Feel free to use any seasonal vegetables you have on hand.
  • This dish can be served warm or cold.
  • For a vegan option, omit the honey or substitute with agave syrup.
