Ingredients

- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground turkey over medium heat until browned.
- Add the onion, garlic, and bell pepper to the skillet and sauté until softened.
- Stir in the sweet potatoes, black beans, corn, cumin, paprika, salt, and pepper.
- Transfer the mixture to a baking dish and top with cheese if desired.
- Bake in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender.
- Let cool for a few minutes before serving.
Notes
- Feel free to add other vegetables like zucchini or spinach.
- This dish can be made ahead of time and reheated.
- For a spicier version, add jalapeños or chili powder.
