Description

A delicious and healthy bake made with ground turkey and sweet potatoes, perfect for the whole family.


Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground turkey over medium heat until browned.
  3. Add the onion, garlic, and bell pepper to the skillet and sauté until softened.
  4. Stir in the sweet potatoes, black beans, corn, cumin, paprika, salt, and pepper.
  5. Transfer the mixture to a baking dish and top with cheese if desired.
  6. Bake in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender.
  7. Let cool for a few minutes before serving.

Notes

  • Feel free to add other vegetables like zucchini or spinach.
  • This dish can be made ahead of time and reheated.
