Description

A flavorful dish featuring grilled chicken marinated in harissa, served with fluffy couscous and a medley of roasted vegetables.


Ingredients

  • 4 chicken breasts
  • 3 tablespoons harissa paste
  • 1 cup couscous
  • 2 cups vegetable broth
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 red onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix harissa paste with olive oil, salt, and pepper. Marinate the chicken breasts in this mixture for at least 30 minutes.
  3. While the chicken is marinating, preheat the oven to 400°F (200°C).
  4. On a baking sheet, toss the diced zucchini, bell pepper, and red onion with olive oil, salt, and pepper. Roast in the oven for 20-25 minutes.
  5. Cook the couscous according to package instructions using vegetable broth instead of water for added flavor.
  6. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked.
  7. Serve the grilled chicken over a bed of couscous, topped with roasted veggies and garnished with fresh parsley.
