- 4 chicken breasts
- 3 tablespoons harissa paste
- 1 cup couscous
- 2 cups vegetable broth
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 red onion, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix harissa paste with olive oil, salt, and pepper. Marinate the chicken breasts in this mixture for at least 30 minutes.
- While the chicken is marinating, preheat the oven to 400°F (200°C).
- On a baking sheet, toss the diced zucchini, bell pepper, and red onion with olive oil, salt, and pepper. Roast in the oven for 20-25 minutes.
- Cook the couscous according to package instructions using vegetable broth instead of water for added flavor.
- Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked.
- Serve the grilled chicken over a bed of couscous, topped with roasted veggies and garnished with fresh parsley.

- Adjust the amount of harissa based on your spice preference.
- Feel free to use any seasonal vegetables for roasting.
