Instructions

  1. In a bowl, mix coconut milk, soy sauce, brown sugar, garlic, ginger, lime juice, salt, and pepper to create a marinade.
  2. Add chicken breasts to the marinade and let them sit for at least 30 minutes.
  3. In a saucepan, combine jasmine rice and water, bring to a boil, then reduce heat and simmer until rice is cooked.
