- 4 boneless, skinless chicken breasts
- 1 cup coconut milk
- 1 cup jasmine rice
- 2 cups water
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon lime juice
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a bowl, mix coconut milk, soy sauce, brown sugar, garlic, ginger, lime juice, salt, and pepper to create a marinade.
- Add chicken breasts to the marinade and let them sit for at least 30 minutes.
- In a saucepan, combine jasmine rice and water, bring to a boil, then reduce heat and simmer until rice is cooked.
- While the rice is cooking, grill or pan-fry the marinated chicken until fully cooked.
- Serve the chicken over the coconut rice and garnish with chopped green onions.
Notes
- For extra flavor, marinate the chicken overnight.
- Feel free to add vegetables like bell peppers or snap peas for a complete meal.
- Adjust the sweetness by adding more or less brown sugar to the marinade.
