Ingredients

  • 2 cups butternut squash, peeled and diced
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced butternut squash with olive oil, salt, pepper, garlic powder, and thyme in a large mixing bowl.
  3. Spread the squash on a baking sheet in a single layer and roast for 25-30 minutes or until golden and tender.
  4. Rinse the quinoa under cold water in a fine-mesh sieve.
  5. Combine the quinoa and vegetable broth in a pot and bring to a boil, then reduce heat and cover, simmering for 15 minutes.
  6. Fluff the cooked quinoa with a fork.
  7. Combine the quinoa with the roasted butternut squash in a bowl, gently folding together.
  8. Garnish with fresh parsley before serving warm.

Make-ahead tips: Pre-cook quinoa and roast butternut squash earlier in the day and mix just before serving. Use an air fryer for a crispier finish.
