Ingredients

  • 2 thick-cut ribeye or New York strip steaks (approx. 1 lb each)
  • 2 tbsp olive oil
  • 1 cup cremini or button mushrooms, sliced
  • 4 slices of Provolone or Gruyère cheese
  • Salt and freshly cracked black pepper, to taste
  • 4 tbsp unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tsp fresh rosemary, finely chopped
  • 1 tsp fresh thyme, finely chopped
  • Fresh basil for garnish

Instructions

  1. Prepare the herb butter: In a small bowl, mix together the softened butter, minced garlic, chopped rosemary, and thyme.
  2. Get the steaks ready: Pat the steaks completely dry with paper towels and season both sides with salt and cracked black pepper.
  3. Heat it up: Pour olive oil into your heavy skillet or cast-iron pan over high heat.
  4. Sear to perfection: Place the steaks in the skillet and let them sear undisturbed for 4-5 minutes.
  5. Add the mushrooms: Toss the sliced mushrooms into the pan during the last 2 minutes of cooking.
  6. Melt the cheese: Top each steak with herb butter and a slice of cheese, covering the skillet for about 60 seconds.
  7. Rest before serving: Allow the steaks to rest for 5 minutes after cooking.
  8. Plate it up: Serve the steak next to the sautéed mushrooms, garnished with fresh basil.
