- 2 thick-cut ribeye or New York strip steaks (approx. 1 lb each)
- 2 tbsp olive oil
- 1 cup cremini or button mushrooms, sliced
- 4 slices of Provolone or Gruyère cheese
- Salt and freshly cracked black pepper, to taste
- 4 tbsp unsalted butter, softened
- 2 cloves garlic, minced
- 1 tsp fresh rosemary, finely chopped
- 1 tsp fresh thyme, finely chopped
- Fresh basil for garnish
Instructions
- Prepare the herb butter: In a small bowl, mix together the softened butter, minced garlic, chopped rosemary, and thyme.
- Get the steaks ready: Pat the steaks completely dry with paper towels and season both sides with salt and cracked black pepper.
- Heat it up: Pour olive oil into your heavy skillet or cast-iron pan over high heat.
- Sear to perfection: Place the steaks in the skillet and let them sear undisturbed for 4-5 minutes.
- Add the mushrooms: Toss the sliced mushrooms into the pan during the last 2 minutes of cooking.
- Melt the cheese: Top each steak with herb butter and a slice of cheese, covering the skillet for about 60 seconds.
- Rest before serving: Allow the steaks to rest for 5 minutes after cooking.
- Plate it up: Serve the steak next to the sautéed mushrooms, garnished with fresh basil.
