Indulge in a perfectly seared ribeye or New York strip steak, topped with luxurious herb-infused butter and complemented by sautéed mushrooms for a gourmet dining experience.

- 2 thick-cut ribeye or New York strip steaks (approx. 1 lb each)
- 2 tbsp olive oil (for searing)
- 1 cup cremini or button mushrooms, sliced
- 4 slices of Provolone or Gruyère cheese
- Salt and freshly cracked black pepper, to taste
- 4 tbsp unsalted butter, softened
- 2 cloves garlic, minced
- 1 tsp fresh rosemary, finely chopped
- 1 tsp fresh thyme, finely chopped
- Fresh basil for garnish
Instructions
- Create the herb butter: In a small bowl, mix the softened butter, minced garlic, rosemary, and thyme together. Set aside.
- Pat the steaks completely dry with a paper towel and season with salt and pepper.
- Heat olive oil in a cast-iron pan over high heat until shimmering, then sear the steaks for 4-5 minutes on each side for medium-rare.
- Add the sliced mushrooms to the pan during the last 2 minutes of cooking.
- Top each steak with a dollop of herb butter and cheese slices, covering the pan for 60 seconds to melt.
- Allow the steaks to rest for 5 minutes before plating with sautéed mushrooms and pan juices. Garnish with fresh basil.
Notes
Make the herb butter in advance and refrigerate it for up to a week. You may also freeze it for longer storage. Always let your steaks rest after cooking to retain their juices.
