Ingredients

- 1 cup ricotta cheese
- 2 tablespoons fresh herbs (such as basil, parsley, or chives), chopped
- 4 slices sourdough bread
- 1 zucchini, sliced
- 1 bell pepper, sliced
- 1 eggplant, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill or grill pan over medium heat.
- In a bowl, mix the ricotta cheese with the chopped herbs, salt, and pepper.
- Brush the sliced vegetables with olive oil and season with salt and pepper.
- Grill the vegetables for about 3-4 minutes on each side until tender and slightly charred.
- Toast the sourdough bread on the grill until golden brown.
- Spread the herbed ricotta mixture on each slice of toasted sourdough.
- Top with the grilled vegetables.
- Serve immediately and enjoy!
