Ingredients

  • 1 zucchini, sliced

  • 1 eggplant, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill or grill pan over medium heat.
  2. In a bowl, mix the ricotta cheese with the chopped herbs, salt, and pepper.
  3. Brush the sliced vegetables with olive oil and season with salt and pepper.
