Description

Ingredients

  • 1 cup cottage cheese
  • 4 eggs, separated
  • 1 cup blueberries (fresh or frozen)
  • 12 tbsp sweetener (optional, like honey or maple syrup)
  • 1 tsp vanilla extract (optional)
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Blend cottage cheese in a mixing bowl until smooth.
  3. Separate the eggs, placing the whites in a large bowl and adding the yolks to the cottage cheese mixture.
  4. Fold in the blueberries and any optional ingredients into the cottage cheese and yolks.
  5. Whip the egg whites until stiff peaks form.
  6. Carefully fold the egg whites into the cottage cheese mixture.
  7. Spoon the mixture onto the prepared baking sheet, forming small mounds.
  8. Bake for 25-30 minutes or until golden and firm to the touch.
  9. Allow to cool slightly before serving.
