- 1 cup cottage cheese
- 4 eggs, separated
- 1 cup blueberries (fresh or frozen)
- 1–2 tbsp sweetener (optional, like honey or maple syrup)
- 1 tsp vanilla extract (optional)
- 1 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Blend cottage cheese in a mixing bowl until smooth.
- Separate the eggs, placing the whites in a large bowl and adding the yolks to the cottage cheese mixture.
- Fold in the blueberries and any optional ingredients into the cottage cheese and yolks.
- Whip the egg whites until stiff peaks form.
- Carefully fold the egg whites into the cottage cheese mixture.
- Spoon the mixture onto the prepared baking sheet, forming small mounds.
- Bake for 25-30 minutes or until golden and firm to the touch.
- Allow to cool slightly before serving.
Notes
