High-Protein Date & Nut Energy Bars are a nutritious and delicious snack option packed with energy-boosting ingredients.


Ingredients

  • 1 cup Medjool dates, pitted
  • 1 cup mixed nuts (almonds, walnuts, cashews)
  • 1/2 cup rolled oats
  • 1/4 cup protein powder
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a food processor, combine the Medjool dates and mixed nuts until finely chopped.
  3. Add the rolled oats, protein powder, honey or maple syrup, vanilla extract, and salt to the mixture and blend until well combined.
  4. Press the mixture firmly into the prepared baking dish.
  5. Bake for 15-20 minutes or until golden brown.
  6. Allow to cool completely before cutting into bars.
