Ingredients

  • 2 Bell Peppers, chopped
  • 1 Zucchini, chopped
  • 1 cup Asparagus, trimmed
  • 3 tablespoons Olive Oil
  • 1 teaspoon Rosemary
  • 1 teaspoon Garlic Powder
  • Salt, to taste
  • Pepper, to taste
  • Juice of 1 Lemon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prep your vegetables by chopping them into bite-sized pieces and cutting the chicken breasts into uniform chunks.
  3. Marinate the chicken in a bowl with olive oil, rosemary, garlic powder, salt, and pepper until well coated.
  4. Assemble the chicken and vegetables on a baking sheet, ensuring they have space to roast properly.
  5. Roast in the oven for 25-30 minutes, flipping halfway, until the chicken reaches an internal temperature of 165°F (75°C).
  6. Finish with a generous squeeze of lemon juice before serving hot.

Notes

Marinate chicken up to 24 hours in advance for deeper flavor. This dish can also be cooked in an air fryer for a quicker result.
