- 2 large sweet potatoes
- 1 lb ground turkey
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup black beans, drained and rinsed
- 1/2 cup corn (fresh, frozen, or canned)
- 1/2 cup shredded cheese (optional)
- Chopped green onions or cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Pierce the sweet potatoes several times with a fork and bake for 40-45 minutes, or until tender.
- Heat the olive oil in a skillet over medium heat, then add the onion and garlic, cooking until fragrant.
- Introduce the ground turkey to the skillet, browning until cooked through. Season with cumin, smoked paprika, salt, and pepper.
- Stir in the black beans and corn, and heat through.
- Slice the cooled sweet potatoes open lengthwise to create pockets for stuffing.
- Spoon the turkey mixture into each sweet potato and top with cheese if desired.
- Return to the oven for 5-10 minutes to melt the cheese.
- Garnish with green onions or cilantro before serving.
