Description

These stuffed sweet potatoes combine tender sweetness with savory ground turkey, black beans, and corn for a hearty and nutritious meal.


Ingredients

  • 2 large sweet potatoes
  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup black beans, drained and rinsed
  • 1/2 cup corn (fresh, frozen, or canned)
  • 1/2 cup shredded cheese (optional)
  • Chopped green onions or cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce the sweet potatoes several times with a fork and bake for 40-45 minutes, or until tender.
  3. Heat the olive oil in a skillet over medium heat, then add the onion and garlic, cooking until fragrant.
  4. Introduce the ground turkey to the skillet, browning until cooked through. Season with cumin, smoked paprika, salt, and pepper.
  5. Stir in the black beans and corn, and heat through.
  6. Slice the cooled sweet potatoes open lengthwise to create pockets for stuffing.
  7. Spoon the turkey mixture into each sweet potato and top with cheese if desired.
  8. Return to the oven for 5-10 minutes to melt the cheese.
  9. Garnish with green onions or cilantro before serving.

Make-ahead: Prepare the turkey filling a day in advance, and stuff the sweet potatoes before baking.
