- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup honey
- 1/4 cup soy sauce
- 1 tbsp rice vinegar
- 4 sub rolls
- Optional: sliced green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
- Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through.
- While the meatballs are baking, prepare the honey garlic glaze by combining honey, soy sauce, and rice vinegar in a small saucepan over medium heat. Bring to a simmer and cook for 5 minutes.
- Once the meatballs are done, remove them from the oven and toss them in the honey garlic glaze until well coated.
- Slice the sub rolls and place the glazed meatballs inside.
- Garnish with sliced green onions if desired and serve immediately.
Notes
- For a spicier version, add red pepper flakes to the glaze.
- These subs can be made ahead of time and reheated before serving.
- Feel free to use ground turkey or chicken as a healthier alternative.
