Description

A culinary delight featuring succulent chicken marinated in honey, lime, and spices, served with creamy avocado and fluffy rice.

Ingredients

Scale
  • 4 pieces Boneless, Skinless Chicken Breasts
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • Salt and Pepper, to taste
  • 3 tablespoons Honey
  • 2 tablespoons Lime Juice
  • 1 tablespoon Lime Zest
  • 2 cups Cooked Jasmine or Basmati Rice
  • 1 medium Ripe Avocado
  • 1 tablespoon Extra Lime Juice
  • 1 tablespoon Olive Oil
  • Fresh Cilantro or Parsley, to taste
  • Chili Flakes, to taste
  • 1 tablespoon Toasted Sesame Seeds

Instructions

  1. Begin by marinating the chicken. In a mixing bowl, combine honey, lime juice, lime zest, minced garlic, cumin, paprika, olive oil, salt, and pepper. Whisk until smooth.
  2. Add the chicken breasts to the marinade, ensuring each piece is well-coated. Marinate for at least 30 minutes.
  3. While the chicken marinates, prepare your rice. Cook jasmine or basmati rice according to package instructions.
  4. Preheat your skillet or grill pan over medium heat and add olive oil. Once hot, place the marinated chicken in the pan.
  5. Sear for about 5-7 minutes on one side until golden crust forms. Ensure internal temperature reaches 165°F before flipping.
  6. Brush the remaining marinade over the chicken in the last few minutes of cooking.
  7. Serve on a plate with a mound of rice, layered with glazed chicken and sliced avocado. Drizzle with extra lime juice, olive oil, and sprinkle with cilantro or parsley, chili flakes, and toasted sesame seeds.

Notes

For maximum flavor, marinate the chicken overnight. The dish is perfect for meal prep and can be customized with various side options.
