- 4 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 ripe mango, diced
- 1/4 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
Instructions
- Whisk the marinade: In a mixing bowl, combine honey, lime juice, olive oil, garlic powder, salt, and black pepper.
- Marinate the chicken: Place chicken breasts in a resealable bag and pour the marinade over them. Marinate for at least 30 minutes.
- Preheat your grill or oven: Heat your grill to medium heat or preheat your oven to 375°F (190°C).
- Grill the chicken: Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Prepare the mango salsa: In a bowl, combine diced mango, red onion, jalapeño, cilantro, and lime juice. Toss gently to mix.
- Top each cooked chicken breast with a generous scoop of mango salsa and serve.
Notes
For best flavor, marinate the chicken overnight. The salsa is best fresh, but can be made a day in advance.
