Ingredients

  • 2 chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/4 cup red onion, thinly sliced

Instructions

  1. In a bowl, whisk together honey, lime juice, olive oil, garlic powder, salt, and pepper.
  2. Marinate the chicken breasts in the honey lime mixture for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  5. Remove the chicken from the grill and let it rest for a few minutes before slicing.
  6. In a large bowl, combine mixed greens, cherry tomatoes, avocado, and red onion.
  7. Top the salad with sliced grilled chicken and drizzle with any remaining honey lime dressing.
  8. Serve immediately and enjoy!
