Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the carrots and sweet potatoes with honey, olive oil, salt, pepper, and cinnamon.
- Spread the mixture on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, or until tender and caramelized.
- Remove from the oven and let cool slightly.
- Transfer the roasted vegetables to a mixing bowl, add milk and butter, and mash until smooth.
- Adjust seasoning if necessary and serve warm.
