  • 1/2 cup hot honey (or honey mixed with chili flakes)
  • 1 cup cooked rice or quinoa
  • 1 cup corn (canned or frozen)
  • 1 cup black beans, drained and rinsed
  • 1 avocado, sliced
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Start by slicing the chicken thighs into bite-sized pieces and seasoning with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium heat and add the seasoned chicken. Cook for 6-8 minutes, stirring occasionally.
  3. Pour in the hot honey and stir gently to coat the chicken, cooking for an additional 2-3 minutes until the sauce thickens.
  4. Prepare your bowls by placing a scoop of cooked rice or quinoa as the base.
  5. Layer on the corn and black beans, followed by avocado slices and the honey chicken. Garnish with fresh cilantro and a squeeze of lime juice before serving.
