Description

Delicious Hot Honey BBQ Chicken Quesadillas combine sweet heat and savory chicken with melty cheese for a crowd-pleasing dish.


Ingredients

  • 2 Chicken breasts
  • 1/4 cup Hot honey
  • 1/2 cup BBQ sauce
  • 4 Flour tortillas
  • 1 cup Shredded cheese (Monterey Jack or Cheddar)
  • 1 Bell pepper, sliced
  • 1 Onion, sliced

Instructions

  1. Marinate the chicken: In a bowl, combine chicken breasts, hot honey, and BBQ sauce; marinate for at least 30 minutes.
  2. Cook the chicken: Heat a non-stick skillet over medium heat and cook each chicken breast for 6-7 minutes per side until fully cooked; dice into bite-sized pieces.
  3. Sauté the vegetables: In the same skillet, add oil and cook bell peppers and onions until tender, about 4-5 minutes.
  4. Assemble the quesadillas: Lay a tortilla on the skillet, sprinkle one half with cheese, add chicken, sautéed veggies, and more cheese; fold in half.
  5. Cook the quesadillas: Cook for 3-4 minutes until golden brown, then flip and cook the other side for an additional 2-3 minutes.
  6. Slice and serve: Remove from heat, slice into triangles, and drizzle with hot honey; serve with sour cream or guacamole.
