Description

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon paprika
  • 1 teaspoon dried thyme
  • 1 cup vegetable broth
  • 1 cup sour cream or plant-based alternative
  • 2 tablespoons flour
  • Salt and pepper to taste
  • Noodles or rice for serving

Instructions

  1. Begin by heating a drizzle of oil in a large skillet over medium heat.
  2. Toss in the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and sliced mushrooms; cook until browned.
  4. Sprinkle paprika and thyme over the mixture.
  5. Whisk together vegetable broth and flour until smooth and pour into the skillet.
  6. Allow to simmer gently for about 10 minutes until thickened.
  7. Remove from heat and stir in sour cream.
  8. Season with salt and pepper to taste.
  9. Ladle the Mushroom Paprikash over cooked noodles or rice.

Notes

This dish tastes better the next day; feel free to make it ahead of time. For a richer flavor, consider cooking it in a slow cooker.
