- 1 lb mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon paprika
- 1 teaspoon dried thyme
- 1 cup vegetable broth
- 1 cup sour cream or plant-based alternative
- 2 tablespoons flour
- Salt and pepper to taste
- Noodles or rice for serving
Instructions
- Begin by heating a drizzle of oil in a large skillet over medium heat.
- Toss in the chopped onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and sliced mushrooms; cook until browned.
- Sprinkle paprika and thyme over the mixture.
- Whisk together vegetable broth and flour until smooth and pour into the skillet.
- Allow to simmer gently for about 10 minutes until thickened.
- Remove from heat and stir in sour cream.
- Season with salt and pepper to taste.
- Ladle the Mushroom Paprikash over cooked noodles or rice.
Notes
This dish tastes better the next day; feel free to make it ahead of time. For a richer flavor, consider cooking it in a slow cooker.
