- 4 boneless, skinless chicken breasts
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup diced jalapeños (fresh or pickled)
- 1/2 cup breadcrumbs
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together the cream cheese, cheddar cheese, diced jalapeños, garlic powder, onion powder, salt, and pepper until well combined.
- Cut a pocket into each chicken breast and stuff with the jalapeño cheese mixture.
- Place the stuffed chicken breasts in a baking dish and sprinkle breadcrumbs on top.
- Drizzle olive oil over the breadcrumbs.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown.
- Let rest for a few minutes before serving.
