Instructions

  1. Preheat the oil in a deep fryer or large pot to about 350°F (175°C).
  2. Prepare the onion by cutting it into thick slices and separating the rings.
  3. Make the filling by combining cream cheese, cheddar cheese, and diced jalapeños in a mixing bowl.
  4. Stuff the thicker onion rings with the creamy mixture, ensuring they are packed well.
  5. Coat each filled onion ring in breadcrumbs, pressing lightly.
  6. Fry the onion rings in batches for 3–4 minutes until golden brown.
  7. Drain the rings on paper towels and serve hot with dipping sauces.

Notes
