- 3.5 lb beef chuck roast
- Kosher salt, to taste
- Black pepper, to taste
- 2 large onions, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup French onion soup
- 2 tablespoons olive oil
- Fresh thyme sprigs
Instructions
- Preheat oven to 325°F (163°C).
- Season the beef chuck roast generously with kosher salt and black pepper.
- Heat olive oil in a large oven-safe pot over medium-high heat.
- Place the roast in the pot and sear on all sides until browned (3-4 minutes per side).
- Remove the roast and set aside. Add sliced onions to the same pot and sauté until softened (8-10 minutes).
- Add minced garlic and cook for another minute until fragrant.
- Return the roast to the pot, pour in beef broth and French onion soup.
- Nestle fresh thyme sprigs around the roast.
- Cover the pot and place it in the oven. Cook for 3-4 hours until the meat is fork-tender.
- Remove from oven, rest for 10 minutes before slicing.
Notes
Optional: Serve with mashed potatoes, garlic bread, or a fresh salad for a well-rounded meal.
