Ingredients

  • 3.5 lb beef chuck roast
  • Kosher salt, to taste
  • Black pepper, to taste
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup French onion soup
  • 2 tablespoons olive oil
  • Fresh thyme sprigs

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Season the beef chuck roast generously with kosher salt and black pepper.
  3. Heat olive oil in a large oven-safe pot over medium-high heat.
  4. Place the roast in the pot and sear on all sides until browned (3-4 minutes per side).
  5. Remove the roast and set aside. Add sliced onions to the same pot and sauté until softened (8-10 minutes).
  6. Add minced garlic and cook for another minute until fragrant.
  7. Return the roast to the pot, pour in beef broth and French onion soup.
  8. Nestle fresh thyme sprigs around the roast.
  9. Cover the pot and place it in the oven. Cook for 3-4 hours until the meat is fork-tender.
  10. Remove from oven, rest for 10 minutes before slicing.

Notes

Optional: Serve with mashed potatoes, garlic bread, or a fresh salad for a well-rounded meal.
