- 1 ripe avocado
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Mix the Marinade: In a large mixing bowl, whisk together the olive oil, lime juice, cumin, paprika, salt, and pepper until well combined.
- Marinate the Chicken: Take your chicken breasts and nestle them into the marinade. Allow to marinate for at least 30 minutes.
- Preheat the Grill: Set your grill to medium-high heat.
- Grill the Chicken: Once the grill is hot, lay the marinated chicken on it. Grill for about 6-7 minutes on each side.
- Prepare the Accompaniments: While the chicken cooks, slice your avocado and prep halved cherry tomatoes.
- Rest and Serve: After grilling, let the chicken rest for a few minutes before slicing and serving with avocado and tomatoes on top.
- Garnish: Sprinkle fresh cilantro on top.
Notes
For best flavor, marinate the chicken overnight. Can substitute lemon juice for lime and adjust spices to taste.
