A delicious and spicy Korean-inspired chicken sandwich topped with tangy kimchi slaw.
Ingredients

- 2 boneless chicken thighs
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 tablespoon gochugaru (Korean red pepper flakes)
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 sandwich buns
- 1 cup kimchi, chopped
- 1/2 cup mayonnaise
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1 tablespoon sesame oil
Instructions
- Marinate the chicken thighs in buttermilk for at least 1 hour.
- In a bowl, mix flour, gochugaru, garlic powder, onion powder, salt, and pepper.
- Coat the marinated chicken in the flour mixture.
- Heat oil in a pan and fry the chicken until golden brown and cooked through.
- In another bowl, combine kimchi, mayonnaise, rice vinegar, sugar, and sesame oil to make the slaw.
- Assemble the sandwich by placing the fried chicken on a bun and topping it with kimchi slaw.
- Serve immediately and enjoy!
Notes
- For extra crunch, add pickled vegetables to the sandwich.
- Adjust the spice level by varying the amount of gochugaru.
- Can substitute chicken thighs with chicken breasts if preferred.
