Description

A delicious and spicy Korean-inspired chicken sandwich topped with tangy kimchi slaw.


Ingredients

  • 2 boneless chicken thighs
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tablespoon gochugaru (Korean red pepper flakes)
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 sandwich buns
  • 1 cup kimchi, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 tablespoon sesame oil

Instructions

  1. Marinate the chicken thighs in buttermilk for at least 1 hour.
  2. In a bowl, mix flour, gochugaru, garlic powder, onion powder, salt, and pepper.
  3. Coat the marinated chicken in the flour mixture.
  4. Heat oil in a pan and fry the chicken until golden brown and cooked through.
  5. In another bowl, combine kimchi, mayonnaise, rice vinegar, sugar, and sesame oil to make the slaw.
  6. Assemble the sandwich by placing the fried chicken on a bun and topping it with kimchi slaw.
  7. Serve immediately and enjoy!

Notes

  • For extra crunch, add pickled vegetables to the sandwich.
  • Adjust the spice level by varying the amount of gochugaru.
  • Can substitute chicken thighs with chicken breasts if preferred.
