Ingredients

  • 2 tablespoons butter
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 3 cloves garlic, minced
  • 1 cup parmesan cheese, grated
  • 1 lemon (juice and zest)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta: In a pasta pot, bring water to a boil, adding a generous amount of salt. Cook the pasta according to package instructions until al dente. Once done, drain and set aside.
  2. Melt the butter: In a large skillet over medium heat, melt the butter until it bubbles gently.
  3. Cook the chicken: Add the cubed chicken to the skillet, seasoning it lightly with salt and pepper. Cook for about 5–7 minutes until it turns golden brown and is cooked through.
  4. Add the vegetables: Toss in the sliced zucchini, yellow squash, and minced garlic. Stir everything together, letting the vegetables soften for about 3–5 minutes.
  5. Combine with pasta: Add the cooked pasta to the skillet, using tongs to gently toss everything together.
  6. Flavor it up: Squeeze the juice of the lemon into the skillet and add the lemon zest. Stir to combine.
  7. Cheesy goodness: Sprinkle in the grated parmesan cheese, stirring until it melts and coats the pasta evenly. Season with more salt and pepper to your liking.
  8. Serve & enjoy: Serve the pasta warm, garnished with freshly chopped parsley for a burst of flavor and color.
