Description

Lemon Herb Chicken Souvlaki Bowls are a delicious and healthy meal option featuring marinated chicken skewers served over a bed of fresh vegetables and grains.


Ingredients

  • 1 lb chicken breast, cubed
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  2. Add the cubed chicken to the marinade and let it sit for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken onto skewers.
  5. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until fully cooked.
  6. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  7. Remove the chicken from the skewers and add it to the salad mixture.
  8. Toss everything together and garnish with fresh parsley before serving.

  • For extra flavor, marinate the chicken overnight.
  • Serve with pita bread or tzatziki sauce for a complete meal.
