- 1 lb chicken breast, cubed
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
Instructions
- In a bowl, combine olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
- Add the cubed chicken to the marinade and let it sit for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken onto skewers.
- Grill the chicken skewers for about 10-12 minutes, turning occasionally, until fully cooked.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
- Remove the chicken from the skewers and add it to the salad mixture.
- Toss everything together and garnish with fresh parsley before serving.

- For extra flavor, marinate the chicken overnight.
- Serve with pita bread or tzatziki sauce for a complete meal.
