Ingredients

- 4 tilapia fillets
- 2 tablespoons olive oil
- 1 lemon, juiced and zested
- 2 teaspoons dried herbs (such as thyme, oregano, or basil)
- Salt and pepper to taste
- 2 cups mixed vegetables (such as bell peppers, zucchini, and carrots)
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix olive oil, lemon juice, lemon zest, dried herbs, salt, and pepper.
- Place the tilapia fillets in a baking dish and pour the herb mixture over them, ensuring they are well coated.
- On a separate baking sheet, spread the mixed vegetables and drizzle with olive oil, salt, and pepper.
- Roast the vegetables in the oven for about 20-25 minutes, or until tender.
- In the last 10 minutes of roasting, add the tilapia to the oven and bake until the fish is cooked through and flakes easily with a fork.
- Serve the tilapia bowls with roasted veggies and garnish with fresh parsley.
