- 1 cup almond milk
- 1/2 cup fresh raspberries
- 1/4 cup chia seeds
- 1/4 cup honey or maple syrup
- 1/4 cup lemon juice
- 1 teaspoon baking powder

- 1/2 teaspoon salt
- Zest of 1 lemon
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine rolled oats, almond milk, chia seeds, honey or maple syrup, lemon juice, baking powder, vanilla extract, salt, and lemon zest.
- Gently fold in the fresh raspberries.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until the top is golden and set.
- Let it cool for a few minutes before slicing and serving.
Notes
- For a vegan option, use maple syrup instead of honey.
