Ingredients

  • 2 Tbsp extra virgin olive oil
  • 3 stalks celery, diced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • Pinch red pepper flakes
  • 14 ounces canned artichoke hearts
  • 1/2 cup marinated sun-dried tomatoes, sliced
  • 32 ounces chicken stock or broth
  • 1 Tbsp lemon juice
  • Salt and fresh cracked black pepper
  • 1 cup packed fresh spinach
  • 1/2 cup heavy cream
  • 1 cup shredded or grated Asiago or Parmesan cheese

Instructions

  1. Heat the olive oil in a large soup pot or Dutch oven over medium heat. Add the celery, onion, garlic, and a pinch of red pepper flakes, sautéing for about 5 minutes until softened and fragrant.
  2. Introduce the artichokes, followed by the sun-dried tomatoes. Pour in the chicken stock and add the lemon juice, bringing the mixture to a simmer for another 5 minutes.
  3. Gently stir in the fresh spinach until wilted, then add the heavy cream, bringing it back to a simmer.
  4. Season with salt and freshly cracked black pepper to your liking.
  5. Off the heat, stir in the cheese until melted and well incorporated. Serve topped with extra cheese and a dash of fresh pepper.
